Here's a Guatemalan recipe for a cabbage salsa from "False Tongues and Sunday Bread". It seems similar to cabbage salsa I've had in Salvadoran restaurants. Chile con Repollo 2 c. fine shredded cabbage 1/2 c. white vinegar 1/4 c. thin sliced onion 1 tsp. salt 1 T. thin sliced red or green chile (I suspect you might add more) 1 tsp. sugar Mix it all, refrigerate overnight and serve.
