The folks at Suburban Landscape that hosted the event as part of their 'Chile Pepper Fiesta' put together a bunch of salsas of their own. A few of the more interesting ones appear below. Italian Salsa 1 cup tomatoes 3 jalapenos 3 serranos 2 Tbs jalapeno juice 2 Tbs capers 1/2 cup red onion 1 Tbs garlic 1 Tbs lemon juice Add pesto till mixture is creamy She had several others as well but I thought these to be the best and most interesting.
