Wings with Peach Sauce Ingredients: 12 whole wings For the marinade: 1/2 cup vegetable oil 1/4 cup fresh lemon juice 1/2 teaspoon ground ginger 2 teaspoons ground pepper 1/4 teaspoon allspice 1/4 teaspoon cinnamon 1/4 teaspoon cayenne 1 cup onion, thinly sliced 2 tablespoons minced fresh parsley salt to taste For the sauce: 3 ripe peaches 1/4 cup fresh lemon juice 2 tablespoons honey 1/4 teaspoon ground ginger 1/2 teaspoon cinnamon salt Makin' It: Prepare the marinade by mixing the ingredients in a freezer bag; add the wings and toss to coat. Marinate in the refrigerator overnight. Grill over hot coals for about 20 minutes, turning often and basting with remaining marinade, or broil for about 20 minutes 6 to 8 inches from the heat source. While the chicken's cooking, prepare the sauce: blanch the peaches in boiling water for 20 seconds or so, then refresh immediately in cold water. Peel, halve and pit them, rub them with 2 tablespoons lemon juice and then puree with the rest of the ingredients. Or forget fresh and use canned peaches with the lemon juice.
